APPLE SNOW WITH GOAT'S YOGURT

If you are lucky enough to have an apple tree bearing cooking apples in your garden, now is the time to prepare this slimming and nutritious dessert.

Apples are high in pectin, which has the effect of reducing cholesterol, mercury and lead poisons from the body.

Apples help to cleanse the lungs, liver and gall bladder and boost immunity.

Apples are also rich in vitamins A and thiamine as well as potassium, calcium and phosphorus.

Serves 4

  • 3 large cooking apples, peeled, cored and chopped
  • whites of 3 large very fresh, organic eggs
  • a little organic honey, to taste
  • 2 tbsp creamy goat's yogurt

For the garnish

2 tsp. cinnamon

1. Place apple in a heavy saucepan with a close fitting lid with 1 tbsp. water.

2. Cook over a very low heat till soft and fluffy.

3. Sprinkle in cinnamon.

4. Whisk egg whites till they form stiff peaks.

5. Fold apple mixture into egg whites.

6. Serve with yogurt and a sprinkling of sieved cinnamon.
