MIXED BEAN CASSEROLE

This warming casserole can be prepared in advance and then reheated when required.

Tofu or goats cheese may be added at the last minute if desired.

Lentils are a nutritious source of B vitamins, iron and fibre - slimming and excellent for balancing blood sugar levels.

Serves 4

  • 2 oz. red split lentils
  • 1 x 15oz tin chopped tomatoes
  • 2 cloves garlic, crushed
  • 1 onion, chopped
  • 1 carrot, diced
  • 2 sticks celery, chopped
  • 4 oz green beans
  • 8 cauliflower florets
  • 6 oz cooked kidney beans
  • 1 tsp. grated ginger
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. grated orange zest
  • pint water

Serves 4

1. Place lentils, tomatoes, garlic and spices at bottom of heavy based casserole.

2. Place remaining vegetables on top and cover with water.

3. Cover casserole and bake (stirring after 30 minutes) at 200C, gas 6, for 1 hr.

4. Serve piping hot, garnished with tofu or goat's cheese and freshly chopped parsley.
