SPICY STACKS

These spicy stacks are the perfect treat to boost brain power and concentration. They are rich in protein, essential fatty acids, B vitamins, vitamin E, selenium, calcium and magnesium, iron; all of which are vital for sharp mental function and steady nerves.

Makes 10-12

  • 2 large eggs
  • 8 oz. ground hazelnuts
  • 1 oz. ground walnuts
  • 2 tbsp blackstrap molasses
  • 1 tsp. ground ginger
  • 1 tsp. mixed spices
  • 2 tsp. sesame seeds, for topping

1. Preheat oven to gas 4, 160 C.

2. Grease a large baking sheet with a little soft unsalted butter.

3. Beat eggs in a bowl, then stir in remaining ingredients to for a dough.

4. With a couple of spoons, shape small mounds onto the greased baking sheet, leaving a little space between each one.

5. Sprinkle each little stack with sesame seeds.

6. Bake 25-30 minutes until golden and leave to cool on a wire rack. Delicious!
